The ipa files hold your iPhone applications. Each one is actually a renamed zip archive; you can peek into the contents yourself. If you copy an ipa file, rename it from ipa to zip, and unzip it, you'll find a 'Payload' folder inside with the actual iPhone app bundle nestled inside that folder.
You can treat the ipa file as the basic embodiment of your applications. Drop an ipa into iTunes and you add apps. Delete an app from iTunes and you are really deleting the ipa file. The ipa holds everything that makes an application work with your devices, including all the FairPlay material that identifies you and permits your account to use the app.

Backing up your apps
Each ipa archive is easy to identify. They use the name of the application, such as Pandora 2.0.ipa. If your folder is part of your normal Time Machine purview, your applications are automatically backed up. If you prefer other backup mechanisms, you can just copy the Mobile Applications folder as a whole or copy individual ipa bundles to another disk or part of your file system.
As long as you back up the entire ipa file, you're backing up everything you need to restore your application at a later time. Although Apple lets you re-download already paid for apps for free at this time, this policy may not continue. When it comes to music and videos, you cannot re-download.
Deleting and restoring applications from iTunes
The Applications pane in iTunes lets you select applications much as you would in Finder. Command-A lets you select all your apps at once. Command-click to add or remove items from the current selection. You cannot, however, drag out a selection.

iTunes will typically remove the apps in question from your iPhone during your next sync. Any data that has been stored in that application, such as high scores or document files, will be deleted at that time and will no longer be restored from backup.
You can restore any application you have removed from iTunes by dropping the ipa bundle onto the iTunes icon or into the Library in your iTunes sources list (on the left side of the iTunes window). If you do that, iTunes will re-add the application to your library, allowing you to sync that app to your iPhone or iPod touch.
While you can use the sync panel to choose which applications to sync or not sync at any given time, deleting apps from iTunes can really help to clean up. You reduce the clutter and can focus on the applications that have earned a place in your library and on your iPhone.
Locating your application data files
Application data—the files that are created on the iPhone and stored in each application's folder—is saved into your Library's Application Support folder in the MobileSync/Backup subfolder. This data is removed from your iPhone and is no longer backed up when you delete an application from your iTunes library.
To check for when your device was last backed up, open iTunes' preferences pane. Select the Devices tab and you'll find a list of devices synced to your computer, as well as the last time they were backed up.
If you want to recover the data before you delete the application, you can use a utility that I wrote called mdhelper (ftp link). The mdhelper utility, which is currently only available as a command line program, will list files that have been backed up from your iPhone and allow you to extract files to your desktop. Be aware that there is, at this time, no way to re-insert your data back into applications after you delete and restore it. You can recover the data for other uses, like looking at it from your desktop or archiving it, but Apple does not offer a restore data feature for applications that have been removed and later replaced.

When you use Sign in with Apple, you can sign in to participating third-party apps and websites with your Apple ID. To see a list of the apps you're currently using with Sign in with Apple and manage your preferences for each one, go to Apple ID settings on your device or sign in to your Apple ID account page.

Choose the address you want emails to be forwarded to.

Stop Using your Apple ID with an app
To stop using your Apple ID with an app, select Stop Using Apple ID, then choose Stop Using.
When you stop using your Apple ID with an app, you're signed out of the app on your device. The next time you visit the app or its associated website, you can either select Sign in with Apple to sign in again, or create a new account.
If you choose to use Sign in with Apple again, you're signed in to the same account you previously used. Some apps might let you create a new password for your existing account so you can sign in again without using your Apple ID.
